Over the last three months I have been trying out the Paleo diet. I thought I would really miss bread and cheese, but your cravings start to change once you start eating less processed food and getting more nutrients from vegetables instead of grains. At this point I don’t really mention Paleo to people unless they ask, because it gets tiring hearing how hard it must be. The only hard part is making sure you have the right foods readily available. However, I do miss dipping my veggies in hummus! I found this recipe in Everyday Raw by Mathew Kenney and it is worth sharing. It makes a great snack with some fresh carrots, celery, jicama and cucumber.
3 cups macademia nuts, soaked 1-2 hours
1/4 cup lemon juice
1/2 cup raw tahini
1 tsp salt
1 cup water
1 clove garlic
1 scoop Mila
Blend all ingredients in the Vita-Mix until smooth. Add water if necessary.
