Recipe from the kitchen of: Gretchen Turzo
3 cups brown rice (medium or long grain) – cook according to instructions on package with water or broth
1 – 17.6 ounce container of Trader Joe’s Steamed Lentils (fridge section) or cook equivalent yourself
2 tablespoons Coconut Oil or to taste
1 teaspoon Sea Salt or to taste
1 cup raisins or to taste
1 small onion
Butter to taste
2 scoops Mila hydrated or dry
Cook rice according to instructions on package using water or broth whichever you prefer. While rice is cooking, saute onions in coconut oil. When onions are soft and sweet 5-10 minutes, add raisins and stir. Turn off heat and let raisins plump. Cover the bottom of a pan large enough to hold lentils with water and add lentils. Cook just enough to warm them. Be careful or they will get mushy. Turn off heat and stir in dry Mila or wait on the Mila if you are using hydrated. Stir rice, salt, lentils and onion/raisin mixture together. Add hydrated Mila if you are using it. Add more salt and butter to taste. Serve with plain yogurt.
