     Nana’s Mila Meatloaf

    From the kitchen of Nancy Ladd

    1-½ lbs. ground beef
    1 lb. ground pork sausage
    ½ large onion-chopped
    ½-1 cup Italian flat leaf parsley –chopped
    ½ cup fine Italian seasoned bread crumbs
    1 egg
    2 scoops Mila chia seeds
    1-7oz.-container sun dried tomato pesto  (farmers market or Trader Joe’s)
    Use at least half of the pesto or more to taste. (I used about 6oz.)
    1 small jar tomato paste

    Pre-heat oven to 350. Put meat and pork in large bowl and mix together well with hands. Add all the rest of the ingredients and  continue to mix very well. Put mixture in a glass loaf pan and bake for about 1 hour. Take meatloaf out of the oven and “frost” generously with tomato paste. Put back in oven and bake for about another 7-10 minutes.

    Let rest for 5 minutes before serving. Enjoy!
